Locking Notes created in previous versions of Notes app

I am trying to lock some Notes which were created before the latest software update. I am unable to lock them - the option is greyed out. I can create a new note and lock that one, but not any existing notes. Is this the correct behaviour for the app?

How can I lock old notes? Is it simply cut and paste into a new note?
